Ingredients
Pastry:
- 1 shortcrust pastry

1 tablespoon melted
butter
(optional) - 1 teaspoon light-colored sesame seeds (+/-) (or another type of nut) (optional)
Topping:
- 9 oz ricotta cheese

lemon
(juice + zest) -
4 sprigs spring
onions
(+/-) (or other herbs) - pepper
Toppings:

cucumber -
3 oz smoked
salmon - 1 teaspoon of sesame seeds (+/-) (or alternative nuts)
- 2 stalks of green onions (approximately) (or substitute with other herbs)
Materials
- 1 pie dish (approximately 11 inches (28 cm) in diameter)
Preparation

Step 1:
Lay out the shortcrust pastry on the inverted pie dish. *We’ve oiled the mold as a precaution. Spread a bit of melted butter over the surface.

Step 2:
Add some sesame seeds or other types of nuts as toppings.*Feel free to include butter and nuts based on your preference.*Make sure to puncture the dough before baking to avoid it from rising excessively.

Step 3:
Bake the crust for 20 minutes at 390°F (200°C). Take it out of the oven and let it cool down.

Step 4:
In the meantime, prep the garnish: Combine the ricotta, lemon juice, lemon zest, and finely chopped chives. * Put the mixture in a cool spot as you get the remaining components ready.

Slice the cucumber thinly.

Step 6:
Slice the smoked salmon into thin pieces.

Transfer the baked shortcrust pastry onto the serving platter and then fill the tart base with the ricotta mixture.

Place the cucumber slices on top.

Then add the rolled salmon strips in the remaining gaps.

Add some sesame seeds (or other nuts) and finely chopped chives (or other herbs). *Feel free to include lemon zest as well.
